This flour is a specialist high protein strong flour milled to produce robust tolerant doughs. An excellent bread flour. It is suitable for the production of normal or laminated yeast raised products over a long or interrupted fermentation period. Laucke's strong flour is excellent when bold, well shaped products are expected from doughs and especially when goods are retarded or partly baked and frozen.
